Homemade Vegan ‘Chicken’
I've been using this recipe for years and it never fails me. It's so tasty in sandwiches, curry, salads, anything!!
Ingredients
1 can chickpeas, drained
1/2 cup water
2 tbsp soy sauce
1 tsp mustard
1 tsp salt
2/3 cup flour
1 cup gluten flour
Vegetable stock
Method
Add chickpeas and water to a food processor and blitz until pretty smooth (it's okay if there are a few lumps).
Add the rest of the ingredients (except the vegetable stock) and blitz until a dough forms. Turn the dough out onto a bench, cut into 3 portions.
Roll each portion into a sausage shape and tie in a knot. Add the knots to a pot or large frypan and fill halfway with vegetable stock. Bring to a boil, then lower to a simmer and cover with a lid for 40 minutes. Remove from stock and leave to cool. Once cool, tear into shreds and use in meals in place of regular chicken!
For sandwiches or salad, lightly fry first with a drizzle of soy sauce. Otherwise, use like you would regular chicken in your favourite recipes!
