Vegan Mozzarella

Slices like mozzarella and tastes (in my opinion) better than mozzarella, you have to try this recipe!! Even my non-vegan friends and family loved this.

Ingredients

2/3 cup cashews, soaked in boiling water for 20 minutes
200ml water
1 tbsp nutritional yeast
1/2 tsp garlic
1/2 tsp salt
2 tsp apple cider vinegar
3 tbsp cornflour

Method

Place all ingredients in a high speed blender and blend until smooth and creamy.

Transfer mixture to a saucepan and heat stirring continuously until it becomes one big clump that doesn't stick to the pan.

Fill a bowl or container with salted cold water then roll your mozzarella mixture into balls (however big you want) and place each ball in the water.

Leave for ten minutes then slice and enjoy!

Will last in the water in the fridge for 3 days!
