Vegan Nachos

Six ingredient delicious cheesey vegan nachos. This recipe is so quick to make and the perfect lazy meal

Ingredients

1 pack corn chips

1 can chilli beans

1-2 avocados, mashed with salt & pepper

Vegan cheese, finely grated

Vegan sour cream (or you can use coconut yoghurt with a good squeeze of lemon juice)

Red onion, sliced thinly

Method

Preheat oven to 180 degrees Celsius.

Place corn chips in a baking tray/dish then top with the can of chilli beans.

Sprinkle vegan cheese over the top of the chilli beans and cook in oven for 20 minutes.

While the nachos are cooking prepare avocado and red onion. Top cooled nachos with onion, sour cream and avocado and enjoy!
