Vegan Crepes

The ultimate French breakfast in vegan form. Who knew crepes could be so easy!?

Ingredients

2 cups flour

2 1/4 cups soy milk

2 tbsp oil (vegetable, coconut or avocado)

3 tbsp sugar

1/2 tbsp vanilla

Makes 8 crepes

Method

Whisk all ingredients in a bowl until there are no lumps.

Heat a large frying pan and melt a small amount of butter (you can also use coconut oil).

Spoon 1/2 cup of crepe mixture into the middle of the pan. Leave for 5 seconds before using something with a flat edge like a spatula and spread the mixture carefully around to make a large circle. You can also do this by lifting the pan and angling it to make the mixture spread but I found a spatula worked much better.

Cook for a few minutes on each side and serve with your favourite toppings.
