Blueberry & Hemp Muffins

Fluffy and moist vegan blueberry muffins that are perfect served with some vegan butter.

Ingredients

2 cups flour

1 cup sugar

2 tsp baking powder

1/4 tsp salt

1/3 cup hemp hearts

1 1/4 cups oat milk

1 tsp apple cider vinegar

1/3 cup oil

1 tsp vanilla essence

1 cup blueberries (frozen or fresh)

Method

Preheat oven to 200 degrees Celsius and grease a muffin tray (makes 16 muffins).

Sieve flour, sugar, baking powder & salt into a large bowl. Add hemp hearts and mix.

In separate bowl mix oil, milk, vanilla & apple cider vinegar.

Fold wet mix into dry mix until just combined then fold in blueberries.

Spoon mixture into muffin tray so they are 2/3 - 3/4 full. Sprinkle some more hemp hearts over the top.

Bake in oven for 20-22 minutes until knife comes out clean.
