Pearl Couscous Salad

A fresh delicious salad that I could literally eat everyday.

Ingredients

1 cup pearl couscous

1 cup vegetable stock

250g cherry tomatoes, halved

1 cup olives, chopped

1 red onion, chopped

1 raw capsicum, chopped

1/4 cup roasted almonds, chopped

Salad greens

100g vegan feta (I like to use Savour NZ Cashew Feta)

Dressing

3 tbsp olive oil

1 tbsp apple cider vinegar

1 tsp maple syrup

Salt & pepper

Method

Cook pearl couscous, by lightly toasting the dry pearls in a frypan. After a minute or so, add the vegetable stock and simmer until couscous is cooked.

Add couscous, tomatoes, olives, onion, capsicum, almonds and salad in a large bowl. Combine dressing ingredients together in a jar then mix through the salad.

Divide into bowls then crumble over the vegan feta to serve.
