Homemade Bagels

There's nothing better than bagels fresh out of the oven. This recipe is really easy and by the end of it you will have your very own!

Ingredients

Bagels

4 1/4 cups flour

2 1/4 tsp active dry yeast

1 1/4 cups warm water

2 tsp salt

Additional Ingredients

Water for poaching

2 tsp baking soda

1/4 cup plant milk

1 tsp maple syrup

Sesame seeds for topping

Method

Combine the yeast and water in a small bowl and leave until foamy.

Place the flour, salt and the yeast mixture in a large bowl and mix until combined. Then knead for 7-10 minutes until it becomes a smooth dough. Transfer to a lightly oiled bowl and leave covered in a warm spot for 1.5-2 hours.

Divide dough into 8 pieces and roll each one into a ball. Keep extra balls covered while you work with one at a time otherwise they may become dry. Roll each ball out into a log about 15-20cm long then wrap around four fingers once and seal together to form a ring. Place on two lined baking trays and leave for another hour in a warm place or overnight in the fridge (if you leave in the fridge overnight, leave for an hour at room temperature the next day before poaching).

Preheat oven to 230 degrees Celsius. Place one bagel in a small bowl of water to check it floats. If not leave for another 30 mins in a warm place until it floats.

In a large pot bring 8 cups of water to the boil with the baking soda and a pinch of salt.

Add four bagels at a time (less if your pot can't fit them comfortably) and boil for a minute each side then transfer back to baking sheet.

Mix the milk and maple syrup together in a small bowl. Brush tops with the milk/maple syrup mixture then sprinkle with seeds. Bake for about 15 minutes until golden brown.

Serve with whatever toppings you choose!
