Cinnamon Scrolls

Fluffy and sweet. What more could you want from a cinnamon roll?

Ingredients

Dough

2 cup plant milk at room temperature

1/2 cup melted vegan butter

1/4 cup sugar

2 1/4 tsp active dry yeast

5 cups flour

1 tsp salt

Filling

1/2 cup vegan butter

1 tbs cinnamon

3/4 cup brown sugar


Icing (optional but recommended)

1 cup icing sugar

2 tbsp plant milk

1/2 tsp vanilla extract

Method

Mix together milk, vegan butter and sugar. This mixture should be slightly warm. Sprinkle over the yeast and leave for a few minutes.

Add the flour and salt and mix until combined. Knead into a smooth dough then place in a lightly oiled bowl, cover and let rise in a warm place for 1 hour. Dough should double in size.

Preheat oven to 180C. Put dough on a floured surface and knead lightly adding more flour if needed. The dough shouldn’t be stick. Roll out into a large rectangle about 1cm think.

Mix or beat the filling ingredients together until creamy. Spread the filling evenly over the dough covering the whole surface. Roll the dough into a log and cut slices about 3cm thick.

Put in a baking tray (they can be close together). Cover and let rise for about half an hour.

Bake for 25-30 minutes until golden brown. Mix icing ingredients together in a bowl then drizzle over buns while still warm then enjoy!
