Vegan Blueberry Pancakes

Fluffy, sweet, delicious pancakes for your Sunday brunch.

Ingredients

2 cups flour

1/4 cup sugar

4 tsp baking powder

1/2 tsp salt

2 cups plant milk

1/4 cup apple cider vinegar

1/2 cup frozen or fresh blueberries

Coconut oil for frying

Method

Mix dry ingredients together in a bowl then add wet ingredients, except the blueberries and whisk until there are no lumps. Stir through the blueberries so they are evenly distributed.

Fry 1/4 cup of the mixture at a time for about 1 minute on each side.

Serve with some more blueberries, lemon juice and maple syrup.
