BBQ “Chicken” Wraps

A recipe my boyfriend always requests. You can’t go wrong with this super easy wrap. Scroll down for a bonus vegan mayonnaise recipe!

Ingredients

BBQ Chicken

5 tbsp BBQ sauce

2 tbsp soy sauce or tamari

Salt & pepper

1 pack of Sunfed Meats Chicken-Free Chicken (or you favourite vegan chicken)

Other fillings

Cucumber

Tomato

Red onion

Lettuce

Vegan mayonnaise (shop bought or scroll down for my super-easy homemade mayo recipe)

Method

Mix together BBQ sauce, soy sauce and salt & pepper together in a bowl. Add “chicken” and mix until covered in sauce. Fry in a pan for about 4 minutes.

Assemble the wrap and enjoy!

Homemade Vegan Mayonnaise

1/3 cup soy milk (must be soy. I tried oat and it didn’t work)

2/3 cup vegetable oil

1 heaped tsp Dijon mustard

1/4 tsp salt

Squeeze lemon juice

Pinch pepper

Blend all ingredients in a high-speed blender or NutriBullet until mixture is stiff. (only takes a few seconds). Taste and add extra of any ingredients if you think it needs it.

Wrap with spinach, cucumber, red onion, avocado, Bean Supreme burger patty and homemade mayo
